nitrite (NO2-)
Definition
Ester or salt of nitrous acid, containing the nitrite (NO2-) ion. Nitrites are converted into nitrates (plant nutrients) by certain bacteria in the soil. In the industry, they are used mainly as meat coloring agents and food preservatives.
