nitrite (NO2–)

Definition

Ester or salt of nitrous acid, containing the nitrite (NO2–) ion. Nitrites are converted into nitrates (plant nutrients) by certain bacteria in the soil. In the industry, they are used mainly as meat coloring agents and food preservatives.
